Your tortilla looks faaar more appetizing to me than any squidgy mayo-coated wedge I ever consumed in a bocadillo - plus (bonus!) no hanging pig appendages. (Alas, Madrid made me aware of a phobia I didn't know I had!)

It's rough when an "attempt" is nostalgia-related, but maybe anything less would have failed to hammer home how your attempts are still a (very worthy) good thing!

@Luisa! Yes, you're absolutely right. I've re-worded it now to make it more clear, but I totally did soak it. Tanis' recipe calls for "softened salt cod" and then he tells you how to soften it, which begins with the line about shredding it. After shredding it, he says to soak it for 4-6 hours or overnight. Basically, my salt cod needed some water to soften it before I could even *think* of shredding it...with scissors.

When I lived in France my boyfriend's mother (who was Spanish)used to make tortilla's for me all the time because I was a vegetarian at the time. She taught me how to make them and I still make them to this day (more than 20 years later). It's such a comfort food.

@Entre puntadas e hilos Gracias por la informacion! The tortilla really was too heavy to flip. What I didn't explain is that we did try to flip it... We used the lid of the large Le Creuset pan instead of a dinner plate as all of ours were too small, but we probably cooked it for too long because only the top half flipped. The bottom half stayed on the bottom. :( Anyway, would love to try a smaller version again. Cayenne sounds like a great addition too!!

Salt cod is one of those things that has long both intimidated and intrigued me: I vow (vow!) to cook one one day, just to see what it's like.

But this, man... this is ambitious. I say good on you for giving it a go, and hell, looks ain't everything. (At least, I've been telling myself that for years.)

Hi Amelia. I come from Madrid and I could live on tortilla because I just love it.

First of all, with all due respect for the book's author the tortilla de bacalao doesn't need potatoes, in fact, you shouldn't put any on it. If you use potatoes the tortilla is too heavy (to turn and to eat). This recipe comes from the north of Spain and you could put a bit of cayenna pepper on it.

To turn the tortilla you should use a dinner plate a bit larger that the pan itself, put it on top and flip it quickly. You do this only once.

This post made me so nostalgic! 1) I also spent a semester in Spain and have such great memories of eating Spanish tortilla. 2) I totally agree with Anne. Food isn't always pretty and tasting good is usually good enough for me! 3) Beautiful pictures! and 4) That card catalog looks so cool!
